Abstract

Sustainability and environmental protection have encouraged many researchers to find optimal solutions to solve complex problems facing humanity with regard to natural resources. As consumption behavior of each individual heavily impacts the environment, experimental and field research has investigated in how far sustainable food choices can be increased e.g. by nudging. However, the baseline of each individual has so far been neglected. The following experimental study examined the power of nudging and the impact of defaults in menu cards on sustainable food choices in relation to participants prior knowledge on sustainability. Results suggest that everyone can benefit equally strong from nudging interventions towards sustainable behavior, no matter the level of prior knowledge on sustainability. Implications for further field research and daily life are discussed.
